Cross a state line in India and the food changes, the language changes, the gods change, sometimes the whole way of life changes. This section travels the regions: the backwaters and boat races of Kerala, the deserts and forts of Rajasthan, the tea gardens and Bihu of Assam, the coastal Konkan, the Tamil heartland. It's the culture people actually live — what they eat at a wedding, how they greet a guest, which festival empties the streets. India holds more variety than most continents, and this is where we take that seriously, one region at a time.
